Let’s build a summer snack survival list
With hungry kids home a lot more over the next couple of months, let’s crowdsource a list of go-to lunch and snack ideas—to make these long, summer days feel a little easier.
Think: things you can prep in 10 minutes or less, or make ahead and pull out when needed. Like these muffins!
Here are a few things our kids are loving:
Muffin tin lunchables: A muffin tin filled with little bites like hard-boiled eggs, sliced cheese, fruit, cold cuts, cut veggies, hummus, crackers, pretzels, or sliced baguette. It feels easier than making sandwiches, and the kids love it.
Peanut butter and honey wraps: Smear, drizzle, and fold. Serve with a cheese stick, fruit, or add sliced bananas for extra staying power. Simple, but always a hit!
Banana lentil muffins: Sweetened only with bananas and chocolate chips, this is a favorite recipe from the blog that I’ve been making for years. I recently made a triple batch and popped the extras in the freezer. They’ve been a huge hit these past couple of weeks—great for camp snacks or a little treat before bed. Pro tip: Use canned lentils or cook a big batch in advance and freeze any leftovers in 1-cup portions for future use. Get the recipe here!
